Ingredients

Cake

  • 2 1/2 cup flour
  • 2 cups granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp of cornstarch
  • 1 tsp salt
  • 1/2 cup unsalted butter (1 sticks)
  • 2 tsp. vanilla extract
  • 3 eggs
  • 1 cups buttermilk, room temperature
  • 3/4 cup vegetable oil

Filling

  • 2 Cups of Strawberries
  • ½ cup of Strawberry preserve
  • 1 tablespoon of lemon juice
  • Whipped Cream

Instructions

  1. Wash strawberries, then slice them into small pieces. 
  2. In a medium bowl, mix fresh strawberries with strawberry preserves and lemon juice. Set it aside. 
  3. Preheat oven to 350°F. Grease and line round pans. Mix all dry ingredients (flour, baking powder, baking soda, cornstarch, sugar, and salt) in a stand mixer with a paddle until fully combined.  
  4. Melt butter and slowly add it to the dry mix, on low speed. Continue to mix until no butter remains, and the mixture becomes crumbly. Pour in eggs, one at a time, and mix on low until incorporated.  
  5. Mix in oil and buttermilk in two installments, at low speed. Add in vanilla and mix at low speed until everything is fully incorporated.  
  6. Scrape down the sides of the bowl with a spatula, then beat on medium-high for an additional 20-30 seconds.  
  7. Pour the batter into the prepared sheet pan. Bake for about 30 minutes, rotating the pan halfway through the cooking process until a toothpick inserted into the center comes out clean. 
  8. Remove the cake from the oven, invert the pan onto a cooling rack, and let it cool completely. 
  9. Once the cake has cooled, use a 2-inch round cookie cutter to cut out circles of cake. For a 4 oz (about 118.29 ml) mason jar, you’ll need 1 cake round, and for an 8 oz (about 236.59 ml) mason jar, you’ll need 2 cake rounds. 
  10. Place whipped cream into a piping bag and pipe whipped cream in the bottom of each jar 
  11. Add the strawberry filling you set aside on top of the whipped cream and then add one cake round on top of the filling.  
  12. Lastly, pipe another layer of whipped cream onto the top of the cake and add a small amount of strawberry filling, be sure not to add too much so the jar can close.  
  13. If using an 8 oz (about 236.59 ml) mason jar, repeat the process of adding another cake round and piping another layer of whipped cream and strawberry filling onto the top of the cake.  
  14. At this time, your cake jar will be assembled and place your lid on top of the jar and seal it. Be sure not to overfill your jar so that it can close properly. 
  15. Serve and enjoy!
