Jackie Robinson Brooklyn Dodgers Cake

In tribute of Black History Month and to celebrate her birthday my client Ms. Melanie Lewis, wanted to do something special this year.

To pay homage to Jackie Robinson and to celebrate her Crown Heights community and the former home of the Brooklyn Dodgers, she decided to host a Jackie Robinson theme birthday party.

As a Brooklynite and growing up near Ebbets Field the major league baseball stadium where Jackie Robinson played. It was only right to honor and pay acknowledgment to this historic figure, by hosting her 42nd birthday in respect to Jackie Robinson’s number #42.

To get started making her celebratory cake, my client contacted me, and we got to work on designing her cake. We went through a few design options and was able to finalize on this beautiful vintage image of the Brooklyn Dodgers Logo.

Our friends over at Sweet Nothings Images was able to perfect the image to create an edible design that also included Melanie’s name and birthday.  

This theme was very important to Melanie as she wanted to truly celebrate Jackie Robinson’s legacy and how his contributions have made a difference in her own life growing up in Crown Heights.

Jackie Robinson would have been 101 this year. After retiring from baseball Jackie in the 1950s Robinson became a very active member of the National Association for the Advancement of Colored People NAACP.

To recognize his efforts and spread awareness in lieu of gifts Melanie asked her guest to donate to the Brooklyn NAACP and the Jackie Robinson Foundation.

Melanie is a huge chocolate lover and wanted to incorporate chocolate into her cake.

She decided to go with a 10-inch moist chocolate cake filled with chocolate mousse and fresh diced strawberries for her main dessert and added cupcakes for guests to take home.

For the cupcakes, she selected a mixture of chocolate and vanilla cupcakes filled with chocolate mousse and fresh strawberries in the middle. As a gift to our client, we added chocolate covered ores to her order. All desserts were imprinted with the amazing personalized image created for the event.

So, let’s get into the cake and how you can make it on your own. For this cake, I decided to use the best chocolate cake recipe in the world Hershey’s perfectly chocolate cake.

I have been using this recipe for over 10 years and it gives perfect results every time with no alterations. If you are looking to elevate the cake a little more, you can add instant espresso or coffee to the boiling water to enhance the flavor.

For this order, I made the recipe as listed below, because we were making a 10-inch cake I doubled the recipe to make 3 10-inch round cakes. I love this recipe because it’s a ONE BOWL cake mixture. 

Hershey’s Perfectly Chocolate Cake

Hershey's Perfectly Chocolate Cake Ingredients

Hershey's Chocolate Cake
Prep Time 20 minutes
Cook Time 40 minutes
Total Time 1 hour

Ingredients

  • 2 cups of sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY’S Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 tablespoon espresso or coffee (optional)

Instructions

  1. Heat oven to 350°F. Grease three 10-inch round baking pans.
  2. Sift and Stir together sugar, flour, cocoa, baking powder, baking soda and salt into mixer.
  3. Add eggs one at a time, then milk, oil and vanilla; beat on medium speed of mixer 2 minutes. 
  4. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
  5. For extra flavor include 1 tbsp espresso or coffee. 
  6. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely

To make an easy chocolate mousse that is sure to be a winner at your next event, kraft has an amazing recipe that I like to use but I like to make a few changes to add my own personal touch.

Chocolate Mousse

Chocolate Mousse

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
  • 3/4 cups cold milk
  • 2 cups thawed COOL WHIP Whipped Topping, divided
  • 1/2 teaspoon vanilla extract

Instructions

  1. Beat pudding mix and milk into the mixer using the whisk panel
  2. Fold in the whipped topping until blended 
  3. Stir in 2 cups COOL WHIP
  4. Refrigerate until chilled

Fresh Strawberry Cake Filling

A quick and simple recipe to turn fresh strawberries into a decadent filling for cakes or pies.  

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 3 cups of fresh strawberries sliced and diced
  • ¾ cups of water
  • 1 ½ cup of white sugar
  • 2 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 zested lemon
  • ¼ teaspoon of salt

Instructions

  1. Combine 3/4 cup water and cornstarch in a saucepan; Whisk until completed combined
  2. Stir in diced strawberries and sugar.
  3. Combine lemon juice and salt into stir saucepan 
  4. Bring to a boil stirring constantly, until clear and thick for 3 to 5 minutes. Remove from heat and cool completely before using.
